Il Cervo, our garden-side dining space near the pool, offers breakfast and lunch exclusively to hotel guests. Mornings begin with a gourmet spread: fresh breads from ancient grains, delicate pastries, and regional meats and cheeses — changing daily for a fresh discovery each morning.
Lunch features hand-rolled pastas with traditional Tuscan sauces and vibrant garden-fresh salads, perfect for sunny days.
Il Cervo is reserved to hotel guests only. Private dinners are available for hotel guests by reservation.
ORTUS by fondo
ORTUS by fondo is a culinary destination just steps from the main house, open for lunch and dinner by reservation. Its name — meaning “rising” or “being born” — reflects a philosophy rooted in nature.
Inspired by the land, our dishes are crafted using fire and embers to elevate pure ingredients, offering a nourishing and pleasurable experience.
A traditional Italian bar complements ORTUS, serving espresso “al banco” and small bites to enjoy on-site or on-the-go.

Located in the main villa, the Casa Newton Bar invites you to relax in a vintage setting or sip your drink anywhere on the grounds. As evening falls, aperitivo hour features Tuscan cocktails paired with flavorful small plates, celebrating local craftsmanship through regional spirits and homemade ingredients.
